Whether it’s wildcaught fish, free-range poultry or grass-fed beef super fresh makes a huge difference. When you can eat fish you caught the same day the flavor is unbeleivable. We had enough fish to feed a hundred people from this fishing trip so we gave most of it to our guides. The one Amberjack fillet we cooked up with chiles, lime, red onions and cilantro fed 15 people! This was truly the best fish I’ve ever eaten.
